I bought a few vegtable starts this year and I decided to try a few new things one of these was Celeriac.It is a root vegetable that tastes like a cross between celery and potato.I recently dug it up and wondered what the heck to do with it.
I found a recipe for roased Celeriac soup and decided to give it a try.I roasted the celeriac and also some parsnips and carrots from the garden.The roasted celeriac was really good! Based on the appearance before you peel it you would never know it.Apparently is is good mashed into potato's as well. I will certainly grow more next year.
For the soup I used celeriac,leeks, potato's,broth and seasoning. It was good but I think I prefer the celeriac roasted with other root vegetables.Most vegetables can be roasted with some good olive oil and crushed garlic. Cook at 425 degrees until they start to brown.
